Beef and Italian Sausage Meatloaf

Parmesan cheese and tomatoes highlight this tasty ground beef and Italian sausage meatloaf.
Ingredients:

* 1 pound extra-lean ground beef
* 1/2 pound Italian sausage, casings removed, about 2 to 3 links
* 1 large egg
* 3/4 cup soft fine bread crumbs
* 1 can (14.5 ounces) diced tomatoes, divided
* 1/2 small onion, finely chopped
* 2 cloves garlic, minced
* 1/2 green or red sweet bell pepper, finely chopped
* 1 1/2 tablespoons dried leaf basil
* 1 teaspoon dried leaf oregano
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 3/4 cup fresh shredded Parmesan cheese

Preparation:
Lightly oil a 9x5x3-inch loaf pan. Heat oven to 375°.

Combine beef, sausage, egg, and bread crumbs in a large mixing bowl.

Chop the tomatoes or pulse in a food processor. Put half of the tomatoes into the meat mixture, along with chopped onion, garlic, and bell pepper. Add the basil, oregano, salt, pepper, and cheese. Mix until blended. Pack into the loaf pan. Bake for 1 hour. Top with remaining diced tomatoes and bake for about 15 to 20 minutes longer.

Let rest for a few minutes; transfer to a platter and slice.
Serves 4.

Lean Beef and Mushroom Meatloaf

Lean ground beef, shredded summer squash, and minced mushrooms help make this a moist and lighter-than-normal meatloaf. Serve this meatloaf with rice or potatoes, along with zucchini or broccoli for a light and tasty meal. Top this meatloaf with a little barbecue sauce or ketchup just before it's done for extra flavor.

Ingredients:

* 1 pound lean ground beef
* 1 small summer squash, about 5 to 6 ounces, shredded
* 1 small red or yellow onion, shredded or finely minced
* 4 to 6 ounces mushrooms, minced
* Dash garlic powder
* 1 large egg
* 1/2 cup fine dry bread crumbs
* 3/4 teaspoon salt
* 1/8 teaspoon ground black pepper
* 4 tablespoons ketchup or bbq sauce, optional

Preparation:
Combine the ground beef with squash, onion, mushrooms, garlic powder, egg, bread crumbs, salt, and pepper. Mix lightly with hands until well combined. Pack into a lightly greased 9x5- or 8 1/2x4 1/2-inch loaf pan. Bake at 350° for 1 hour and 15 minutes.

About 15 minutes before the meatloaf is done, pour off excess fat. Top with barbecue sauce or ketchup, if desired. Return to the oven and continue baking for 15 minutes.

Glazed Bacon-Wrapped Meat Loaf

Ingredients:

* 4 strips lean bacon
* 2 teaspoons brown sugar, optional
* 1 pound lean ground beef
* 1/2 pound ground pork
* 1 medium onion, finely chopped
* 1 red or orange bell pepper, finely chopped
* 2/3 cup fine dry bread crumbs
* 1 large egg, slightly beaten
* 1/3 cup grated fresh Parmesan cheese
* 1 teaspoon Cajun seasonings
* 1 teaspoon Worcestershire sauce
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/3 cup evaporated milk or whole milk
* 1/2 cup barbecue sauce

Preparation:
Cut bacon strips in half crosswise and coat with the 2 tablespoons of brown sugar. In a large skillet, cook the sugared bacon for about 2 minutes to render some of the excess fat. Or, cook on a paper plate in the microwave for about 1 minute.

Heat oven to 350°. Line a baking pan with foil and lightly oil the foil or spray with nonstick cooking spray.

In a large bowl, combine the ground beef, pork, onion, bell pepper, bread crumbs, egg, cheese, Cajun seasonings, Worcestershire sauce, salt and pepper, and milk. Put the mixture on the prepared foil-lined baking pan and shape into a loaf.

Spread barbecue sauce over the loaf and arrange the bacon strips over the top.

Bake until bacon is crispy and meat loaf is firm, about 1 hour to 1 hour and 10 minutes. Let stand for 10 minutes before slicing or moving to a serving platter.
Serves 6.

Classic Meatloaf With Country Gravy

Ingredients:

* 1 1/2 pounds lean ground beef
* 1/2 pound ground pork
* 1/2 cup finely chopped onion
* 1/2 cup finely chopped bell pepper, red or green
* 2 cloves garlic, finely minced
* 1 tablespoon fresh chopped parsley or 1 teaspoon dried parsley flakes
* 3/4 cup fine dry bread crumbs
* 1 large egg, lightly beaten
* 1/4 cup milk
* 4 tablespoons ketchup
* 1 teaspoon prepared mustard
* 1 teaspoon Worcestershire sauce
* 1/2 teaspoon salt
* 1/4 teaspoon freshly ground pepper
* 1 jar (12 ounces) country gravy, or about 1 1/2 to 2 cups homemade

Preparation:
Heat oven to 350°. Spray a 9x5-inch loaf pan with cooking spray.

Combine the beef, pork, onion, bell pepper, garlic, parsley, bread crumbs, egg, milk, ketchup, mustard, Worcestershire sauce, salt, and pepper. Mix with hands until ingredients are combined, but don't overmix. Gently pack the mixture into the prepared loaf pan. Bake for about 1 hour, or until lightly browned. Let stand for 10 minutes, while heating or making the gravy. Invert the loaf onto a serving plate, slice, and serve with hot country gravy.
Serves 6.

Basic Meat Loaf With Barbecue Flavor

Ingredients:

* 1 large onion, finely chopped
* 1 cup ketchup
* 1 tablespoon Worcestershire sauce
* 3 tablespoons brown sugar, packed
* 1 1/2 to 2 pounds lean ground beef
* 8 to 12 ounces ground pork or bulk pork sausage
* 1 1/2 cups fresh fine bread crumbs
* 2 large eggs
* 3 tablespoons finely chopped parsley or 2 teaspoons parsley flakes
* 1 scant teaspoon salt
* 1/4 teaspoon black pepper

Preparation:
Line a 13x9-inch baking pan with foil and lightly grease the foil. Heat oven to 350°.

Combine the ketchup, Worcestershire sauce, and brown sugar until smooth. Put 1/4 cup of the mixture in another bowl, cover, and refrigerate. Mix the remaining sauce with the onion, ground beef and pork or sausage, bread crumbs, eggs, parsley, and salt and pepper.

Shape into a large loaf in the prepared baking pan. Bake for 1 hour and 15 minutes; spread the reserved sauce over the top of the meatloaf. Bake for 15 minutes longer.
Serves 8.

Cheddar-Spinach Meatloaf

Ingredients:

* 1 pound extra-lean ground beef
* 1/2 to 1 pound ground veal
* 1 cup finely chopped onion
* 1 cup soft bread crumbs
* 1 large egg, lightly beaten
* 1/2 teaspoon salt
* 1/4 teaspooon black pepper
* 1/2 teaspoon Cajun seasoning
* 1/4 cup beef broth or milk
* 10 ounces frozen spinach, thawed and squeezed dry
* salt and pepper
* 1 1/2 cups shredded sharp Cheddar cheese
* stewed tomatoes, diced tomatoes, or ketchup, optional

Preparation:
Mix beef, veal, onion, bread crumbs, egg, 1/2 teaspoon salt, the 1/4 teaspoon black pepper, and Cajun seasoning. Add beef broth or milk and mix until blended. On a piece of foil about 18 inches long, pat out the meat mixture into a rectangle about 1- by 14 inches. Sprinkle spinach over the meat layer, sprinkle with salt and pepper, then sprinkle the cheese over all. Using the end of the foil to help, roll the meatloaf up (do not roll the foil into the meatloaf. Leaving the length of foil around the loaf, place it on a plate and refrigerate to chill. Remove from the foil and place in a lightly greased 9x13-inch baking pan.

Heat oven to 350°.

Bake for 1 1/2 hours, or until done. If desired, top with stewed or diced tomatoes or spread a little ketchup over the top.

Potato Meatloaf

Ingredients:

* 1 pound extra-lean ground beef
* 1/2 pound ground pork or ground chuck
* 1 cup diced onion
* 1 large baking potato, shredded
* 1 medium carrot, shredded
* 1/2 cup vegetable broth, or chicken broth
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1 large egg
* 1 1/2 cups soft bread crumbs
* 1/3 cup ketchup
* 1/2 teaspoon herb seasoning mixture
* .
* Topping:
* 1/4 cup ketchup

Preparation:
Heat oven to 350°.

Combine all ingredients until blended. Pack into a lightly greased meatloaf pan or loaf pan, or shape into a loaf and place in an 11x7-inch baking dish. Bake for 1 hour. Pour off excess grease, spread 1/4 cup ketchup over the top of the loaf, and bake for 20 to 30 minutes longer.
Serves 6 to 8.

Sweet Pepper Meat Loaf

INGREDIENTS:

* 1 1/2 pounds extra lean ground beef
* 1/2 pound ground pork, or use more ground beef
* 1/2 cup fine dry bread crumbs
* 1/2 cup chili sauce or ketchup
* 1/4 cup beef broth
* 1 egg, lightly beaten
* 1 medium green bell pepper, coarsely chopped
* 1 medium red bell pepper, coarsely chopped
* 1 medium sweet yellow or orange bell pepper, coarsely chopped
* 1 medium onion, coarsely chopped
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 1 teaspoon herb and garlic seasoning or other salt-free seasoning blend
* .
* Sauce
* 3/4 cup chili sauce or ketchup
* 1/2 cup beef broth
* 2 tablespoons light brown sugar, packed
* few drops Worcestershire sauce
* 2 teaspoons cornstarch
* dash Cajun seasoning

PREPARATION:
Heat oven to 350°.

Combine meat loaf ingredients; blend well. Pack into a large lightly greased loaf pan or shape into a loaf and put in a lightly greased 13x9x2-inch baking dish. Bake for 1 hour and 15 minutes. Pour off excess fat and let rest for 10 minutes before slicing.

Combine sauce ingredients in a small saucepan; whisk to blend ingredients. Bring to a boil over medium-high heat; boil, stirring, for 2 minutes. Spoon over sliced meat loaf.

Sweet Onion Meat Loaf

INGREDIENTS:

* 1 1/2 to 2 cups diced onion
* 2 tablespoons butter
* 1 tablespoon balsamic vinegar
* 2 pounds lean ground beef
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 2 eggs
* 1 cup soft bread crumbs
* 1/2 teaspoon ground savory
* dash celery salt
* -
* Topping
* 1/2 cup ketchup
* 1/4 cup brown sugar
* 2 tablespoons balsamic vinegar
* 1 teaspoon prepared mustard

PREPARATION:
Heat oven to 350°.

Line a 9x13-inch baking dish with foil Place a rack a piece of crinkled, lightly greased foil in the pan.

In a saucepan, saute the onion in butter for about 6 to 8 minutes, until lightly browned. Add balsamic vinegar and saute for 1 minute longer.

Combine meatloaf ingredients until well blended; stir in onion mixture. Shape into a large loaf and place on the foil in prepared pan.

Bake the meatloaf for 1 hour and 15 minutes.

While meatloaf is baking, bring topping ingredients to a boil in a small saucepan, stirring to blend well. Spoon topping over the loaf and cook for about 10 to 15 minutes longer.
